Microgreens Salad


  • 2 cups mixed microgreens (such as broccoli, kale, arugula, or mustard greens)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste


  1. Rinse the microgreens and pat them dry with a paper towel.
  2. In a large bowl, combine the microgreens, diced avocado, halved cherry tomatoes, chopped walnuts, and crumbled feta cheese.
  3. In a small bowl, whisk together the lemon juice, honey, Dijon mustard, olive oil, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad and toss gently to coat.
  5. Serve and enjoy!
